    I'll be carving up our ham when done and dropping off plates for my wife's folks and my dad. Triple smoked bone-in-ham, smashed baby potatoes and an asparagus/pea concauction.

    Very different Easter Sunday supper for us this year. But happy we can still feed them.

    Trying this recipe and method our for the first time.

    Everything looks great, I had to do the ham in the oven since we had storms all day. It was good but nothing like smoking outside with some beers or bourbon.

    Im awaiting the arrival of my Camp Chef 24 Pellet grill, hopefully tomorrow. I have not ordered the "side sear box" yet but i may end up doing so. Its a propane attachment that gets up to 900 degrees for searing or quick grilling. Its an extra $200 but maybe worth it. I will keep my old weber for now just in case i have issues searing or getting to high temps with the pellet grill. I have been smoking on an electric masterbuilt which has been great but i needed a anew grill and researched a lot and went with the Camp Chef instead of a propane unit plus a separate smoker.

    so a quick question. has anyone added lava rocks to a pellet grill to get higher temps for certain foods? i have read that it helps and one guy makes an insert with lava rocks that goes over the burner, but its almost $100 and for that i'd just get the $200 sear box since i have propane plumed on my deck.
    any issues getting a pellet grill HOT? any experience with lava rocks?

    Sean, I have never heard of lava rocks on pellet grill. The one thing that is very important on a pellet grill is airflow from the fans to control temp. I would imagine you may be doing more damage than good, but not sure.

    As mentioned in your other thread, my buddy has the woodwind with the searing station. It is a nice addition. If I were you I would try 2 of the grilling grates. They really conduct heat and get really hot in the top of the grates.

    Attached is a pic of some filets I was doing and the Yoder is only set to 425. Grates get much hotter. I would try grates first. You can get 2 for about $50.

    I have the DLX camp chef as well. I've had it since November got on black Friday deal. I don't think you will be disappointed

    I ended up with this one. Got it for $459 to my door. I called and asked if they gave a discount for ER nurses and and not just cops and fireman. The lady said right now with Covid I'll give you a better discount :)

    I believe camp chef made a model where you can move the heat diffuser and cook with a direct flame. While I could technically do the same I’m weary of grease drippings falling into the hot box and making a mess and gunking up the hot box.

    well you don't wanna mess up the hot box. that would be a disaster if you got your drippings in there and gunked it up. thanks for just the tip

    yeah the diffuser can be moved. i was thinking of adding a stainless basket filled with lava rock, like one for grilling veggies over the top of it. i dont even have the thing yet and i wanna mod it lol

    I don't know how the pellet smokers work, but they look similar to my stick burner.

    If I don't have room or enough heat to grill some vegetables etc, I put a big Lodge cast iron (or I'm foil) over the firebox and pan fry them. My box gets whicked hot when I'm smoking at 225-250. Works like a charm for me.

    I have made the rib eyes and then pulled them about for about 30 minutes to let it get to high .......but what I usually do if I am going to sear something after smoking i always have the weber kettle ready
