    My daughter usually makes me a peach cobbler for my birthday. A few years ago she grabbed the green food coloring that's in the same type bottle as the vanilla. Green peach cobbler! It tasted fine, and my birthday is in March, so St Paddy day accent.

    That would be cool! Funny how cayenne and paprika are almost the same color. Me and my boy could only eat 10 of them. He had 4 and I had six. Really good flavor, just spicier than hell.

    That's how it ends up with smoking these large pieces of meat, usually will last 2-3 days (not that I am complaining)

    Man BBQ is hard work.......

    Almost midnight and I just finished trimming a brisket. Started off as 19.78 lbs. of USDA Prime and I trimmed a lot off. Now I am making my injection on the stove. Will shoot my injection in it and continue to let it sit out. I want to put it on about 1 am then go to bed. Wake up at 7am so I can pull it and wrap it. Go to kids soccer game in the morning and get back and continue to watch it. Should be some good eating tomorrow night!!!

    Going outside right now to get the Yoder and the Tappecue meat probes setup and ready....

    Well, a few posts back I talked about pellets and mentioned Lumberjack Comp Blend was my favorite. We were super busy last night and did not have time to go to Rural King for Lumberjack pellets. Dropped in Lowe's and got the Pit Boss Comp Blend.

    I had about 1/4 or less of Lumberjack pellets in the hopper. The Pit Boss was used to fill it up to the top. The Pit Boss pellets for sure burned hotter and the Yoder could not regulate them as well. I had the smoker set at 250 degrees and I had a probe on the grate besides the brisket. The smoker did real well and maintained temp pretty consistent until about 5:30am. Pit Boss pellets looks like they started burning from 6 am to end of cook. As you can see, they are much hotter. Never changed the temp setting of 250 on the smoker.

    The good news is the brisket is done (faster than expectedly) and resting in a cooler for a couple hours. Dinner will be good tonight!!!

    Haha, I have had every smoker out there..... Pellet grill/smokers are where it is at as far as consistancy goes. Set it and forget it. I put the brisket on at 1am, went to bed, pulled it off and wrapped it at 7am. You never have to touch anything!
