I lived that horror before I came out here in 2004. 17 years in San Fernando Valley before all the aerospace companies left. I'd have to drive up to Santa Barbara and down to San Diego depending on client. Don't miss that chaos at all....

Still there..it's a National Historic Landmark. No one is going to be tearing it down. Oldest continuously operating restaurant in Denver. Yep. oldest liquor license as mentioned. You can order fried bull balls now for take out. Actually not sure about that...

You gotta hook me up with some restaurants that have good veg dishes. I do prefer to have breaks from meats for a couple of days at a time. I do enjoy a good tempeh.

    I have made something similar?

It was a PB, banana and bacon sammich cooked like a grilled cheese sammich. So regular white bread, butter on one side of each slice, smeared some PB, mashed bananas and bacon slices cooked over a griddle till it was crispy on the outside.

this is the best one around. they have a vegan ho-ho that is awesome.
    https://www.watercoursefoods.com/

here are a couple of other that are worthwhile.
    http://www.radhagovindas.com/
    http://cityocitydenver.com/
https://www.ediblebeats.com/root-down (killer veg based dishes along with meat if you want to switch hit)
https://www.ediblebeats.com/vital-root (same owner as root down)

if you do fish, there are some killer sushi spots
    https://www.misakidenver.com/
    https://www.sushiden.net/

both of those places fly their fish in from tokyo every day. every. day.

these are sister restaurants to sushi den
    https://izakayaden.net/
    https://ototoden.com/

lowry beer garden and park burger both do great veggie/black bean patties. beer garden is slightly better.

i'll see what else i can find for you.
