Bought it a few weeks back and the guy told me the previous owner did the timing belt on his own. Not sure what to check but want to get this resolved right away. Runs great and haven’t noticed anything abnormal.

It sounds like they either (A) didn't get the timing right, like a cam jumped as is typical, (B) it's VVTi and they also attempted doing the cam seals, and forgot to install the service bolt.

More than anything you need to verify the timing before you drive another mile. I highly recommend reading this page: https://www.toyoheadquarters.com/threads/toyota-2uz-fe-timing-belt-marks-4-7l.335/

After setting the marks, be sure to go through a couple of rotations, and make sure the lines ultimately line up every other rotation.

Is there a chance that I will need to get the timing belt done again?

If the belt itself is fine, and they replaced with the correct coolant (pink/red) I can't think of a reason to.

So I guess I’m unsure of the first step. I finally got home and looking to do some work to check on it. The coolant level is low as well but it’s bright pink. Should I check the condition of the belt and go from there? Do I have to undo a lot to be able to check the timing?

Got your PM, keeping everything public. I'm sure others can help out too, I've been busy as shit the last few days.

    https://www.tundras.com/threads/so-you-wanna-buy-just-bought-a-1st-gen-tundra-eh.115928/

That thread has a lot of info on your truck. It also has a link to this, which you should download to your device, to service your vehicle. And you can use the Search feature in the file to investigate codes etc.

Yes, you should start by checking the condition of your belt, if you have the V8, a snapping belt will kill your engine.

If the belt physically looks OK, not cracked to hell or shredded, it's probably one of two things: You've got a sensor reporting bunk info (due to sensor failure or wire damage), or your timing jumped. I'd start by confirming your timing, using the site linked in my first reply above.
