Coconut Bread for the low carb lifestyle

    My wife found this recipe online, and it actually taste great, especially with real butter on it. It's a must every time we make our turkey chili. Low carb and no refined sugar. Here's the recipe she uses, but there are multiple ones to choose from. I know it's not a rack of baby back ribs, but if you love bread like I do this is a tasty and healthier alternative.

    Coconut Flour Bread
    Ingredients:
    • 6 Organic Eggs, at room temperature
    • 1/2 Cup coconut oil, melted and cooled
    • 1 Tablespoon raw honey (optional)
    • 3/4 Cup coconut flour
    • 2 Tablespoons arrowroot powder (optional, makes a lighter loaf)
    • 1/2 Teaspoon salt
    • 1 Teaspoon Grain Free Baking Powder
    Instructions:
    1. Preheat oven to 350 degrees.
    2. Use a medium/large bowl, mix eggs, coconut oil and honey (if using).
    3. Mix until all the wet ingredients are combined.
    4. Add coconut flour, arrowroot powder, baking powder and salt to the wet mixture and mix until the batter is lump free.
    5. Allow the batter to sit for 5 minutes.
    6. Pour batter into a greased bread pan (I used a medium bread pan, 7 3/8″ x 3 5/8″ x 2″).
    7. Bake bread until the top is golden brown and a toothpick inserted into the middle comes out clean, about 35-40 minutes.

    Any organic flour will do, here's the brand we use.Nutritional information, 9 grams of carbs per serving compared to 25 in white flour. Everything else eggs, butter, are carb free[​IMG][​IMG]

    Props to you guys for being able to do that. If I dont eat some carbs, I get really lethargic and honestly get a little violent. This kid needs a bagel every now and then to keep the beast at bay.

    Just to let everyone know, you can substitute arrow root, whatever that shit is with more honey, also you don't have to use grain free baking powder. These are substitutions my wife made.

    Used to travel to Cajun country a lot before I retired. Outrageously great food, brother! That's probably one of the reasons I'm counting carbs at this stage of my life LOL! Those folks know how to chow down.
