Man, they turned out great. I couldn't really tell a big difference between the dry aged and the non dry aged, but they both turned out amazing. No pictures of them sliced but they were perfectly rareIMG_20181224_165324.jpg

Smoked butt that day in the Big Green Egg all night long and smoked white chicken chili. Going to be good eating today.

I made some overnight cinnamon rolls last night. I'll toss those in the oven this morning. Fresh cinnamon rolls and coffee can't be beat.

For brunch, we're doing what my family calls Big Bowl. Hashbrowns, scrambled eggs, sausage, onions, peppers all cooked up then mixed together in a big bowl.

I was gonna ask too. I spotted rainbow trout, but couldn't place the others. Never caught sheepshed or bluefish before.

Those are saltwater fish. Caught them in the surf in October, along with some speckled trout and puppy drum.

The rainbows aren't native to this area but DGIF stocks s local lake in the winter.

Well the prime rib was a success. Almost a 17 pounder and maybe only 2 or 3 pounds are left over.
The chimichurri is gone, hell the only real leftovers are the desserts. Everyone filled up on the food.
Good food, family and friends, you can't beat that.
I hope everyone else had it as good.

Protein round 2. Pork butt was rubbed yesterday and smoking in cherry now. It won't see the light of day until it's 195F.

And 14 hours later the butt is done. I'm gonna shred it, if I don't eat most of it first. Put it in the crockpot in the morning while the Turkey goes in the oven.

Jumping Jesus on a pogo stick. That's got to be the best butt I've ever smoked. I don't usually congratulate myself, but, it's good.
