    Heres a custom smoker my buddy has at his lease in south Texas. I think it cost about 2k plus the controller was 4-500. It's made to take one bag of charcoal in the hopper and will easily go 12-15 hours without touching it. It is super consistent and is truly set it and forget it. The controller uses a variable speed fan to feed the fire oxygen as the temp drops from the selected grill temp. It's just large enough to cook a few briskets.

    This will be the direction I go when I'm ready to step up my game.

    Unless you go red.... ;)

    I really like the Kamado Joe that replaced my old Char-Broil Akorn. It cooks more evenly than the cheaper Akorn did. For less than $200 the Akorn was a good deal and really smoked brisket, pork shoulder and ribs like a champ.

    I’m shaking my head a little at some of these responses.

    You want a smoker to cook food low and slow - brisket, ribs, pork shoulder, chicken, etc.

    Look no further than the Weber Smokey Mountain 22”. Check Craigslist or buy new for under $300. Most efficient charcoal smoker I’ve ever used.

    Paired with a maverick wireless thermometer, pretty much set and forget. I do overnight cooks all the time, stays within 15 degrees for 8 hours.

    Several forums out there with some good advice and mods. The two mods I did that I think are valuable are the hinge for the top and replaced the door with the Cajun bandit door.

    I’ve had all types of smokers - custom sticker burner offsets, commercial electric, etc. nothing beats the value/ease/quality of the WSM.

    I got to agree on the Kamado Joe. Love mine. Best customer service i have had. They don't even care if you are the original purchaser, they ask for a pic of whats broke and the part is sent to your house free of charge. Any Kamado style grill will do the same. I've ran one load of lump charcoal that smoked a brisket for 24hrs straight, so it is pretty efficient.

    Those actually work quite well. You have to feed the fire more frequently than some of the more spendy units, but for the price - it does a great job. You will enjoy it.

    I also have done this many times. Most ceramic "egg" style smokers are all good about this. They can also sear a good steak.
    What I liked about the Kamado Joe is it came with several things that were extra on the BGE and was actually cheaper than the BGE.

    You cant go wrong with any of them. I had a Primo Jr (too small) and now have a BGE, I also have a gas grill for the quicker cooks as well as to cook burgers/dogs for the kids while the brisket/shoulder is on.

    If you are looking at the BGE, you can get a discount at an eggfest or the Kamado Joe, you can get a discount at Costco during their road show.

    Another thing to consider is a Sous Vide. I've found that i can do most of the cooking prior to putting it on the BGE for flavor and texture. Its worked well for Beef Ribs and Pork Ribs.

    Exhaust Dirty Deeds 8”SS, some led lights, Osram headlights, Pro Stop brakes, Pop Lock, AFE dry air filter with charcoal delete.
    There is an APP and a website called BBQ done right with Malcom Reed. Go there for some awesome recipes, rubs and he even goes over some smokers. Yes he is a big guy,, so you know he knows how to cook! Love his food!!

    Great choice. I’d suggest you at least consider the 22.5” model if you plan on smoking whole packer briskets or cooking for more than your family. There are a few forums out there where you can research this question and feedback from others who are in the same position.

    Also - plan on using metal wire to connect the charcoal basket to the grate it sits on in the bottom of the unit. It’s a convenience thing. Same with adding some caster wheels to able to move the unit easily. Search for the minion method - it’s one of the more common methods people use to light the charcoal. Finally - I’ve tested many types of charcoal in the WSM. My favorite for temp control and longevity is Royal Oak Ridge/Classic from Lowe’s. Stock up when it’s on sale for $4/bag.

    Most of all have fun!

    You’re going to love the Primo. I have been cooking on a Primo XL for about 8 years. It’s large enough to cook several racks of ribs, and the fire bowl separator cuts the cooking surface in half to make it more efficient when cooking a couple of steaks or burgers.

    Someone else commented that most all ceramic kamados are the same. I’d agree for the most part. Comes down to customer service, accessories, and price.

    With that said, Costco has a version of a ceramic kamado on sale for $500. It was the size of a large BGE. Great deal and I’d pick one up if I was in the market to purchase.

    I have an 18” Weber Smokey Mountain that I love and works VERY well. Once you get the hang of it, you’ll enjoy it! If I could do it again, I’d get the 22” but I’m still happy with the 18”. As others have mentioned, LOTS of resources to read up on using it.

    BGE in large. Got it a few years ago for $200 from a friend that was moving cross country. I'll occasionally throw some steaks, or pizza, on it but primarily just use it as a smoker.
