Amen!!! I make a mean batch of gravy as well.

Looks delicious! Gonna give the recipe up to your now very hungry audience?

    The gravy is easy.
pound of breakfast sausage cooked, a tablespoon or two of bacon sqeezings, ( you do keep those bacon sqeezings right?), add a couple tablespoons of flour and cook that into the meat, add a couple more and cook that into the meat if you want, add a cup of milk, (whole milk damnit) stir it in until it reduces add another cup of milk or cream if you want, cook until it reduces stirring all the time, be sure to scrape the bottom of the skillet to get those brown goodies loosened up, add more milk if you want then cook the gravy till it coats the back of a spoon or whatever thickness you like. Season with black pepper, all you want.

Bisquits all I am going to say is self rising flour and real cold butter.

Love me some gravy and biscuits. My wife's family is from Mississippi and they make tomato (mater) gravy and biscuits. It's dang good but I'm still partial to the sawmill gravy.
