Anyone else out there smoke cheese?

    Wondering if anyone else here has ever smoked cheese. I smoke when the outdoor temp does not go above 40 degrees. My favorite is sharp, but swiss and hot pepper cheese is also good. I use an A-maze-n smoker tray which is made specifically for pellets. The best pellets I've found are Perfect Mix Pellets. I just use a stamdard gas smoker box without firing it up. Everyone that tries my smoked cheese falls in love with it.

    What smoking device do you use? Is it an expensive piece?

    Hoss I haven't used a smoker, but I spent a week in Texas and loved that every bar/restaurant seemed to have their own smoker. For good reason too, it all tasted amazing. It's on my list of things to do. I may he reaching out in the future!

    I have never smoked any cheese, but I buy it. Right now I have some smoked Gouda cheese in my fridge right now. It is AWESOME!

    I use my old Little Chief smoker to smoke cheese. I usually go with Tillamook extra sharp. This time of year makes it easier temp wise. Softer type cheeses can be tricky. It's good to check often to make sure your cheese hasn't had nuclear meltdown.

    Still rolling stock baby....
    Cold smoke, indirect, keep the temps between 70 - 80 degrees. 3-4 hours for most cheeses.

    I had a home made cold smoker I made out of a old freezer, some 3in ducting and a small firebox. Worked great.

    I really need to build a small smoke house, but I am don't know if I will be staying here or moving on.

    This is what I use. Light one end and it smokes for at least 5 to 6 hours. Light both ends and it will smoke around 3 hours or so. I usually light just one end.image.jpg

    image.jpg I smoke it on the heavy side. Usually around 5 hours. But I like the heavy smoke taste which isn't for everyone. I couldn't find my cheese picture but I did find my smoked chicken breast pic. Mmmmmmm

    image.jpg Does anyone else use this seasoning! I buy it by the case. I use it on everything I make on the grill, eggs, baked Potatoes, and just about everything I make. I replace salt with this stuff. Although the first ingredient is salt. Adds really good flavor!
