A lazy sunday at home for a change, with my weber performer.....

    So I rarely get a sunday off let alone a full weekend like this one. So yard work was done yesterday and today I am kicking it back, trying to do as little as possible. So I wanted ribs, ran to the store picked up a slab of st Louis cut ribs and headed home.
    Fired up the weber performer grill, set it up for in direct heat, added some apple wood chunks and prepped the ribs while my temp came up to about 240.
    Sorry no pics of prepping the ribs but it involve a rinse, drying, peeling off the membrane, then some yellow mustard and then the rub is applied.

    Then onto the heat and smoke for about 2-1/2 to 3 hours. Then a wrap in foil after applying brown sugar and honey. Then wrapped and cooked for 2 hours or so.
    Finally removed from the foil, sauced and left to finish for about 30 minutes.
    That's where the pics take off. I like the ribs to have some firmness to them vs falling off the bone, which is good don't get me wrong... Hope yall enjoy....

    no charge, I normally make several racks and take out to work, never charge....
