35 degrees here today in Western NC....so homemade granola

    My wife decided to make 5 lbs of homemade granola....dam home run with bases loaded!!!....Should last us a few weeks.:thumbsup:

    Granola - she doubled the below recipe. (Brown it good for the munch/crunch!):drool:

    3 cups whole oats
    1/2 cup pecans
    1/2 cup slivered almonds
    1/2 cup walnuts
    1/3 cup sunflower seeds
    1/4 cup sesame seeds
    4 Tablespoons butter
    1/2 cup brown sugar, packed
    1/2 cup maple syrup
    1/2 teaspoon salt
    1/2 Tablespoon vanilla extract
    1 cup raisins

    Preheat oven to 350. In a large bowl, combine oats, pecans, almonds, walnuts, sunflower seeds and sesame seeds. Place on a heavy baking sheet with sides and bake, stirring occasionally, until the oats are golden and toasted, about 10 minutes. Return to bowl and add the raisins.

    In a small saucepan over medium heat, combine the butter, brown sugar, syrup and salt. Bring to a simmer and stir until the butter is melted and the sugar is dissolved, about 4 minutes. Remove from the heat and add the vanilla. Pour the sugar mixture over the toasted oats and mix thoroughly.

    Return the mixture to the baking sheet and pack down lightly with a spatula. Bake until the mixture is fragrant and golden, about 10-13 minutes.

    Let cool completely before removing from the pan. Break up the granola and store in an airtight container. Makes approximately 6 cups.

    Dang, that looks delicious! I've done something similar in the past and liked using dried cranberries in place of the raisins. The cranberries are a little sweeter and have more of an acidic "bite".

    @Patriot You're the guy with all the blueberry bushes right? Have you ever tried drying some of your blueberries and adding them? May have to wait until the next harvest - not sure how well frozen/thawed berries would dehydrate.

    Hey Thanks, and Yes we farm/grow blueberries, good memory! We have not tried blueberries yet, but plan to at some point. My wife and I both like dried cranberries as well. Endless what you can do with home made granola.

    Full sun and access to water Steve...they don’t like over watering and like pine bark shredded mulch. Touch base if and when you decide to plant a few bushes, be happy to pass forward what I have learned over the years.

    This was the first day of last seasons pick. We harvested only 23 gallons due to a late frost. The year before we picked 37 gallons. Wife and I can pick a gallon an hour each. Berry Treasure bother!

    Made some last night using dried cranberries. Forgot to buy sunflower seeds (not happy about that) but it turned out great. I like mine on the chewy side so we cut the roasting step short by a couple minutes and I added some honey to the mixture. Thanks again @Patriot for sharing!!
