Merry Christmas Tundra gang! We just flew back to Tennessee. Feels good to be home.

 

Idk about all of you, but spending time with family & friends has been a very good thing the last couple of days. I'm also certain I've consumed at least 10X my weekly caloric-intake in just 48hrs

I have to give the women in my life respect; they are exceptional cooks and bakers and make it so difficult to say no

 

Tonight is our traditional low country boil we have every 25th. I look forward to this every year.

 

Not traditional, but a variation. Tonight we are having birria enchiladas with a host of sides. My favorite is bacon-wrapped, stuffed jalapeños with Sweet Baby Rays BBQ sauce as a glaze.

 

I like those, especially smoked. A few on here know and make those. I believe @Sirfive is one. Possibly @FrenchToasty? Good stuff.

Don’t get me wrong, I’ll destroy some birria enchiladas also. Or any enchiladas, tamales, zapatos, papusas, or whatever you got

 

On this day, I will destroy them. They are that tasty. Interesting thing is, this is all being prepared by East coast Italians! I will enjoy it while I can.

 

Is that like a crawfish boil?

i havent made jalapeno poppers since i discovered armadillo eggs.

 

We make armadillo eggs different at my house. Pan sausage wrapped into a ball around fresh jalapeno slice and spoonful of cream cheese, baked.

 

Similar. It’s been tradition for us for a good 15 yrs or so. Anyone passing thru is invited but since mom and dad moved to southern AL we haven’t had as many takers, it’s just been us. Which is easier on the pocketbook. But yeah, crab leg clusters, shrimp, corn, onion, potato, garlic, andouille and kielbasa in a spicy boil.

 

We did filet mignon and crawfish fettuccine. The local Edward’s sells beef tenderloins for $55. Makes 15 filet steaks.

 

We had ham, deviled eggs, street corn, probably some other stuff I don't remember because sleep deprivation, and I made Mac n cheese casserole from scratch.

For the first time in... hell I think its been 20 years (believe it or not) I/we had Prime Rib for Christmas eve. Melted in my mouth, my God that's what real meat tastes like!

Yeah, I recall some people doing the "washer mod" back on the day on their imports. It's supposed to let out heat.

YES, (good eye) I've run into several in TX with the same wheels tonight, they aren't very common.

 

It's a sign. A Christmas miracle.

 

Birria enchiladas were outstanding in every way. I'm going to sleep like a baby tonight.
