    Per almost usual the butts are stuck at 175 so I stuffed them all in a roasting pan, covered in foil, and cranked the heat up to 325.

    Normally I'd let them go but they NEED to be done by 11:30 so I can get them to a picnic. Figured 16 hours would be good but here we are.

    Yeah, that’s the wrapping temp for me. Takes 2 hours after wrap at 225° to reach 203° for me usually. In brisket speak wrapping at the stall is the “Texas crutch”. Plus if you wrap, you capture the juices. I pour the juice off in a bowl and put in the fridge while the butts are doing the mandatory rest in the cooler. 2 hour rest is great, 4 is better. The meat cools back down to 160s and doesn’t dry out when you pull it then. I take the drippings bowl and skim the fat off the top and pour the good juicy stuff back in the bowl with the pulled meat. Sprinkle a little seasoned salt while pulling. Magic.

    Finished product. Pulled pretty easily and had no complaints lol.

    Rubbed with Kinders The Blend since I was making it for a variety of people and set in the fridge for 48 hours. 10 hours smoked at 180, 4 at 225, wrapped for 2 at 300. Spritzed with apple juice every 2 hours. Used apple pellets and a smoke tube for the first 6 hours.
