2006 Tunda being rollbacked into the shop for timing belt, water pump, radiator, O2 sensors, tie rods, alignment, parking brake....

Should I go ahead and have brake and power steering fluids changed too?

Seems like you're already giving them a shitload of money; so why not? Especially if both of those truly have over 200K. WAYYY overdue...Personally I would do these myself, not hard.

Fluids are not just mileage dependent, but time dependent. Brake fluid especially. It will absorb moisture. Every two years or so if you live somewhere hot and humid like I do. You can go longer, but it's really not hard to do and both power steering fluid (Dexron ATF) and brake fluid are cheap.

I added these to the written list I'll present to the service dept. desk this afternoon.

Might as well....get it done while they have it.

Good idea! I guess I should do that. How do I do that?

Post all of your updates and questions in 1 thread instead of a bunch. Like maybe your "It's happening" thread. You could even edit it and rename it. @KNABORES has a good example here and so does @FiatRunner here

I'd definitely change the fluids out, way overdo, and both are easy to do with basic tools.
