    T-Bone and baby potatoes in the smoker until steak is at 120F. Sear in very hot cast iron skillet in garlic butter. Remove skillet from high heat and sautee potatoes in garlic butter and Italian herbs.

    The local Harris Teeter has Hatch chiles right now so I grabbed a couple of pounds. I've got a few recipes I'm considering. Chile Verde with pork in a slow cooker, gazpacho or chicken thighs in a red chile sauce. I'm leaning toward the gazpacho sincw it's going to be in the 90s for the foreseeable future. But if any of you Southwesterners have a super secret local recipe I'm open.

    I found these Flankenstyle ribs this week. I have never tried it before. It's almost like the korean style cross-cut short rib, but thicker.Just pure awesomeness; lots of marbling that makes it just fall-apart tender and very flavorful (for those who can't tolerate fat, sorry, you won't be able to appreciate it).
    I grill a lot, but haven't been so impressed with a new cut as I was with these. It might be a new favorite.

    I also had a couple chuckeye steaks that I grilled for meal prep lunches for the week.

    I drove past a Mexican grocery and meat market today and saw a sign advertising T-Bone for $5.99/lb. Had to stop and try it. (Our typical prices here at my regular grocery's butcher is about $12 to $15/lb)
    This one was just over a pound, about $7.50 total.

    Just out of sheer curiosity, is there a farm name or distributor listed on the green chile you got? I see that you are in VA, I actually am like 30 miles away from Hatch, NM the chile capital of the world. I always find it interesting how much fake "Hatch green chile" is actually sold across the states.

    They were in bulk boxes, maybe 25 lbs each. I didn't notice a brand, but it said product of New Mexico all over the box. Harris Teeter is the grocery store, owned by Kroger. It's the only place I have ever seen them around here.

    Like I said I was just wondering but I think it is pretty cool they make it all the way to the East Coast. I'm sure there is some sort of marketing trickery going on with the name "hatch green chile" though cause there is no way this tiny town can produce enough to supply the country lol

    How did they turn out? What dish did you end up making with them?

    ^^^^ this is where we get Green Chilies they are farmed in New Mexico. This year the wife and I ordered a few pounds and roasted, diced them, and froze them. We come to the conclusion that ordering them already done and in jars or whatever is way more easier.:) you can pre order them in January and they shipped in the end of July.     I'm about to throw some babybacks on the smoker tomorrow...those look like they came out good! Perfect motivation for me!
    Sounds delish. A little different than what I'm used to doing with green chile but I might have to try it out !
