    Mmmmmmm fresh made this morning
    Soaked for 24 hours in a marinade then at 4am since I was up anyway I stared this batch.
    Just pulled it off and letting it cool
    Damn it's good

    Best jerky i ever had was a buddies homemade! Yours looks really good too! I still have never found a jerky for sale that i am 100% happy with.

    I give it away to co workers, moral is down at the moment folks are stressed so I make food and take it to work. Of course I keep some for personal enjoyment...

    That's how I sliced it, most of the times I slice into smaller strips.

    I posted it in another thread I think, but here it is, no big secret. I have had folks follow it and tell me it does not taste as god as mine tho, its a gift I have..

    1 bottle soy sauce
    1 bottle Worchester sire sauce.
    2 tablespoons back pepper.
    1 table spoon liquid smoke, hickory, leave out if you are making this on a smoker.
    2 tablespoons mortons tender quick, optional but I add it.

    note about the soy and Worchester sauce, only use a name brand, look at most off brands abd they have HFC in them, the name brands I use do not. Same with the black pepper, grind it yourself or use a name brand, most off brands have soy mixed in with the pepper.

    For the meat you can use whatever, I use beef, deer and duck breast.
    For beef I used a bottom round roast, 2 of them, that after I trimmed I had about 4lbs of pre dried meat.
    I also use inside round and tenderloin. Look for the leanest cuts of arm roast you can find and use at least choice grade meat or better.

    I slice the meat and place in a large zip lock bag.
    Mix all the ingredients in a bowl and mix well then pour into the bag with the meat.
    Mix the contents well and place the bag in a pan in case it was to leak then into the refrigerator for 12 - 24 hours, flipping the bag around once or twice to keep everything covered well.

    Pour the bag into a colander to drain the meat.
    Line baking sheets with paper towels and dry off the slices.
    Then place on your de hydrator and let go for about 6 hours or so, depending on how thick the slices are and or how dry you like the jerky.
    When done place in racks to cool then into a glass jar or plastic bags or food saver type bags and enjoy.

    That's all I do.

    I hickory smoke a spicy vension jerky. I use ground season spicy vension and a jerky gun..it turns out pretty tender and a nice smokey flavor. It does not last long.

    I have never made the ground jerky. I was talking to a buddy today who wants me to try it, of course he does he gets fee jerky LOL

    Love that renewable resource. I don't hunt any more tho.

    Just getting started
    Looking good guys, I use that renewable resource as well - deer, elk, antelope, or whatever I can get in bow range :). I make my own jerky, breakfast sausage, smoked sausage, you name it.

    For my jerky I use mr. yoshida marinade and add soy sauce, red pepper, and garlic. I do both sliced and grind with a jerky gun.

    Marinating for 24 hours
