    Ha...thanks. I'm going to give it a try next time we need a potato side.

    We have had success with Ricardo. Quick and easy.

    We use quick rise yeast (Fleishmanns), the stuff that comes in the little jar and you scoop it out. After a lot of trial and error, we tweak it like this;

    No need to let quick rise yeast rest in water solution. Add water, yeast, sugar, salt to water in bowl (we use a Kitchen Aid stand mixer with dough hook). Slowly add flour. Add more flour if it's too tacky. We like it so it stops sticking and forms a giant ball that pulls away from the bowl. Continue mixing for a couple minutes. Makes 2 pizzas, so double if you want 4 or leftover dough (it keeps a couple days in fridge or weeks in freezer). Form 2 balls for single recipe (they will be about 275g each). Mold and fold into a nice looking ball without creases and rest them on parchment (spray parchment with oil,) and let rise for 30-90 minutes. It will come out a nice big ball, soft and airy. Do NOT roll it. Press it out with finger tips to form a crust as big as you want, ours are about 10-12". The less you play with it after it's risen, the better it will be after cooked.

    I poof the dough in a BBQ tub with a lid from Princess Auto.
