    Yeah - it's pretty much just unwritten comp time.
    I earn 192 hours PTO per year (our "sick" time is in that pool with "vacation") and I cash in 160-190 hours per year because I end up responding to emails or issues even when on vacation.

    And here I was thinking I'd have company for the two extra nights I picked up. Started the first one 15 minutes ago, and coming back again for tomorrow. 24 hours of OT. Pays for my kayak and a little cushion. :yes:

    I miss most of the significant mileages. I wind up doing the maintenance early, and then I forget to keep an eye on it after.

    I'm a bit over 30K. I should have traded 5K ago?

    Fun times. At least your labors will be rewarded with delicious meats.

    I’ve been waiting for it too…

    Nah, I needed him to go to school so I had room in the driveway. I smoke in bulk every 6-8 months and the wife vacuum seals the meat in meal-size portions. This should carry us into the summer.

    Dang, you are low and slooow on the temps. Mine are at 160ish and have entered the stall. Should be done in 6-8 hours.

    Do you boil the bags come meal time? I've done that with Brisket. The bark does get a tad soggy, but it's likely not going to survive well no matter how you reheat it. Other than that, tastes like you just took it out of the smoker, and it's certainly just as juicy.
