I bought my truck two months ago from the local Toyota dealership with 6k miles. It was a demo model. Sometimes I feel the truck shifting rough when coming from a stop and accelerating. It doesn’t happen all the time but it concerns me. Is this something I should call the dealership about and have them look at it? It’s still under warranty.
Also, does anyone have any complaints about the headlights? I can barely see because the visibility is not very far and at times i have to turn on the brights even on the interstate.

It's under warranty, have the dealer try it out. They are big heavy trucks and for that reason they don't shift like a Camry. Headlights might be out of adjustment, you can read the manual about the dial to adjust the level. The dial is left of the steering wheel. Might also need to get your vision checked. I use reading glasses, but can see fine driving at night. I do have auxillary lights for the two lanes in rural areas at 3am.

Tundra sometimes does that little jump or like a little additional throttle pulse after you stop and then start moving again ... the car does a little jump.
I notice that once in a while I think when I stop uphill and then start moving again.
Hard to explain but there are some threads about it. Maybe that's what you are feeling. It's not changing the gear or transmission problem just a throttle pulse by the computer for a second or less.

btw,my '16 has one one the best headlights I've ever seen and that's just the low beams. Very bright and covers the entire road side to side. I have a dial to move them up/down and they are not LED. My setting is low enough that I never get high beamed by others. Maybe the LEDs are not as bright!

They shift hella slow, if you are in second gear, once you stop and step on gas again, they shift back to first and it jerk
