Narrowed down my search to fox 2.5 CO W/ DSC and rear fox 2.5 DSC.

Front will be 2.5” of lift with none in the rear as of right now. I was told fox comes with a 700lb spring which should help with my overland steel bumpers, winch and soon to be loaded tent.

    SPC Control Arms as well.

I’m hoping for a big improvement over ride quality from stock. How will this ride off-road for anyone who is running a similar setup? Is there anything I should second guess?

The rear is probably going to sag and feel a little spongy on you if you load up the bed with gear, but other than that you've selected a good kit. I'd probably recommend at least an AAL, but you can go with the shocks and then go from there.

Fox makes a solid product which will be better over stock in pretty much every situation, but share a little more about what off road is for you. Rock trails? High speed dunes? Mall parking lot curbs?

As mentioned, rear sag is likely going to be your issue. It will be more noticeable since the truck should be about level when empty with that lift in the front.

    Mainly rock trails.
    Would you recommend rear shackles?

Okay definitely something to think about. A leaf I haven’t thought of. Mainly shackles and airbags where what I was thinking if it gets rough. Thoughts

how do you think this will perform off-road? Rocky trails to be exact, maybe some high speed runs on some dunes / fields.

With a RTT over the bed including a rack and camping gear, it's not unusual to have 300-400 lbs of weight back there. So put weight in the bed and measure the squat from the centre of the hub to the wheel well. It will be the same with the Fox shocks back there. You will need whatever suspension work you do to compensate for that squat if you're running the weight all the time.
