    I used the one on the side of the bag.

    1kg 00 flour
    2-1/2 cups warm water, mine was 103 degrees.
    1tbl fine salt
    1tbl sugar
    7 grams yeast, I just went ahead and used 1 packet ready dry yeast.

    Bloomed the yeast in 1 cup warm water and a pinch of sugar to give the little guys a energy snack,

    Combined the dry ingredients in a mixer, then added the cup of bloomed yeast and the remaining 1-1/2 cups of water

    Mixed until a dough ball started to form then dumped the bowl onto a lightly floured cutting board and kneaded by hand until well worked.
    Put some oilive oil in a 4qt bowl, added the dough ball and let rest for a few hours.

    Removed from bowel, kneaded lightly then cut into 1/3rds and formed dough balls 2 went into the freezer 1 in the oven

    Pressed into a 12 in cold cast iron skillet that was well oiled

    Added a layer of cheese then sauce, then cheese then pepperoni.

    Placed into a 525 oven for 15 minutes.

    let rest 10 minutes, removed from pan to cutting board.

    Some.
    I like it, but I hate it. Being lactose intolerant AND allergic to wheat gluten makes eating pizza very unpleasant for me. But, man do I miss it...

    Well thank you but I am not a leader, trust me there are members here who rank way above my meager cooking skills.

    I pretty much just wing stuff, if I feel like it then I go for it. So I honestly do not have a plan for anything its all spur of the moment
