Usually a failed starter gives only a single click. Are the connections on the terminals solid? It seems obvious but I had the same problem last week and my negative terminal had come loose.

If you have a DMM, ideally one that captures Min Max instantaneous lows/highs, place a lead on good bare metal spot on the block, and one on the battery terminal post negative side.

When trying to start it, volts should remain at Zero otherwise you have a bad connection.

If you can repeat this from positive post to starter terminal post, that would be great.

If battery voltage post to post doesn't drop when you hear the click, it's likely the starter solenoid aka bendix is stuck.

How many miles and short trips or highway use?

If your whole dash blacks out and comes back a few seconds later, may be your starter.
I would definitely troubleshoot other electrical issues before jumping on the starter, since it is intense. Assuming you have a 5.7L not the 4.7. I would try jumping the starter relay and see if you get anything from there.
When mine went, I tried jumping the battery and it was successful,
Turned it off and retried turning it on, and all I got was a click, but I could hear the fuel pump priming.
I did get a code, referencing the Crankshaft position sensor, if you have this I would say ignore it since it might be the starter.
I pulled the starter relay, and jumped it, and I could hear the starter click, but would not spin.
Swapped the relay, assuming it was the relay, and same thing happened.
Swapped the battery under warranty, and same thing happened.
I jumped it one last time and it came back on, drove it around the block and it stalled leaving me stranded on the other side of the block, had to take the tow of shame to get it back home.
At this point I just gave in and bought a starter, replaced it and has been good ever since. It's probably been 4 or 5 years since I replaced it with a Denso unit from rockauto.

but then it stalled while driving.

Just happened to me also. Damn heat shields took for ever... If you do it yourself remove the dipstick tube I fought with that shit forever. You don't need to remove the headers but it is tight.
