So I have purchased gloss black door handle covers, gloss back tail gate handle, Matte black overlays for the tundra decals and matte black window trim chrome delete. Did I make the right decision or should I have went with matte black everything?

Mine is about the same as you described except I just removed all the chrome badges. I did use a gloss black over lay for the front grill logo though.

Was it hard to pop those badges off and remove the glue after? I’ve gave it some thought and possibly went with doing that

I'm guessing yours is pretty new so no,peel them off or if they have a lot of resistance use fishing line or dental floss to shave them off.
You can use a heat gun for the two way tape and polishing compound for the rest, but most of them when new come off with everything intact.
