I got a CEL the other day as I was driving through some high elevation out west and had been up to 13-14k the day before but the day it came on I was at about 7-8k and I looked at my ultra gauge I keep running on the dash and it was a p2241 which is an O2 sensor I believe. I cleared the code as I was driving down the road and it hasn't came in since. I live at 860'. My question is can quick elevation changes throw a code or am I looking at needing new O2 sensors?

I'd take this as a sign your bank 2 (passenger side) O2 sensors may be due for new Denso units.
