I am finding some nice used limited trucks but I am wondering of the leather seats would be too hot since I live in AZ.

No I have leather in Az and it's fine, lots of things you can do to help keep the interior cooler.

Get yourself a good ceramic tint like xpel and you'll be good to go. It's kind of amazing how cool my truck stays in summer having all the windows and windshield tinted with it.

^^^^^ This. A ceramic coating on your windows will help reduce the heat coming through them. That and remote starting the truck with the seat ventilation on makes for very comfortable seats.

Like others said, good ceramic tint and a windshield shade help, along with remote start.
