Is there a difference in normal day to day driving between 5100s and 6112 paired with 5160....or is the difference only on offroad?

I noticed the difference. The 6112/5160 combo is rather nice on road as well.

    Interested in this.

Is there a place to compare the different version of Bilstein's available and use scenarios?

6112 are much thicker and I thought would have different set up internally because the only difference between 5100s and 5160 is the little reservoir

You are not going to notice difference between 5100vs5160 on the road. The reservoir gives you more oil for cooling the shock is not getting hot on road unless you are driving rough windy roads .imho
