I could definitely use extra room, is it possible/practical to remove the center console & shifter so I can get an extra seat? I have searched all over and only saw 1 or 2 for sale.

Possible? Yeah, of course.
Worth it? Not at all. You'd be better off selling yours and buying one with the column shifter, At that point, if space is so important to you just get a Sequoia my dude...
