Is there any option to get a single seat for the rear of a 2001 access cab? Recently pulled out the bench to replace the rear window, and I like the extra space. Rear seats almost never get used, and I would prefer to have the space for cargo, but having a single seat would be handy occasionally. Is there something that might work there and still be safe?

I'm confused as hell here. Unless the 2001 AC is totally different than my 2003 AC, the geniuses at Toyota have already done this for you. The rear bench (at least in the 2003) splits and folds up in a 60/40 fashion. You can either sit 3 across, 2 on passenger side or 1 on driver's side. Is this not the case on the 2001?
