    This thread is making me hungry. Been in London all week and I just saw a commercial about adding paprika as a spice. Baked beans and mushrooms and baked tomatoes for breakfast. Had a steak last night with no grill marks and no seasoning whatsoever. They tried to pass off ham as bacon.

    This weekend I’m cooking omelets and proper steaks.

    You have to ask for streaky bacon if you want proper bacon.

    I didn’t grill a darn thing today, but I gave the ol’e Weber Genesis a good cleaning this evening. Scraped the bottom of the grills, the tub, and drip pan clean. Cleaned up the burners and the little burner tube between them so it lights up beautifully again. For the last while getting the second and third burner lit has involved a calculated explosion. Well, no more. Topped that off with a mist of degreaser over the exterior, and a pressure wash. Dang, she sexy again. Best gas grill I’ve had, and I bought it fairly well used about 10 years ago.

    Stock, with a few cosmetic mods.
    Not grilling, but I put a 9lb. Pork Shoulder on my pellet smoker at 5pm, my time. Its now 10pm here and I just refiled my smoke tubes and gave it a quick spray with apple juice. I’m guessing it should be done by noonish tomorrow.

    Just came off the smoker just about a 22hr session. Last 8 hrs. wrapped in butcher paper to help move the stall along. It’s resting in a cooler for a few hrs. and will pull it later. More pics to come…

    5lb bone in pork shoulder smoked on my Pit Boss pellet smoker. Stalled at 147 F and wrapped in heavy duty foil. Pulled off the smoker at 205 F then rested in the oven at 170 F for 1 hour. Pulled apart nicely

    Does the bacon in the middle of the burger end up cooking?

    I love the idea of making it. I'm going to make some burgers like that.

    Was just thinking would it be good to cook the bacon off like 50% , then let it cool, then add it to the ground beef mix? So it's bacon in the middle gets cooked well?
