    Anyone ever made pulled beef? Seems pretty straight forward. Smoke a chuck roast until about 160* and then put in a pan with beef broth and onions and cover and finish cooking to 200*. Going to try my hand at it this weekend.

    We usually just cook it in the crockpot. In fact, my wife made shredded beef tacos earlier this week. They were delicious. BUT now I’m tempted to try grilling or smoking it. Dunno if that would look like I’m learning new dishes or trying to show her up… :monocle:

    Yall clean your grills? Mine gets the gunk knocked off with a scraper before it gets hit and that’s about it.

    Just watched a Guga video where he did something like this with a brisket, but birria style. I bet it would work just as well with chuck roast. The basic difference is that instead of beef broth and onions, you braise it in a birria marinade. I'd be smoking the beef with tacos in mind, so that style would work great for me.

    Nothing wrong with a simple burger at all.

    Wife bought 5lbs of hamburger meat this week for enchiladas and told me I’m making smash burgers this week. I did what every man would do when they get told they are going to do something, I said yes m’am and went and seasoned up the blackstone.

    Burger with pepper jack cheese, crispy jalapenos, bacon, and this BBQ sauce. Might be my top BBQ sauce.

    Is that the smoked chuck roast? Looks delicious! I love making French dip sammiches with shredded beef, but I’m lazy don’t make make any consume dip. I usually just butter the hoagies and throw them under the broiler until they become Maillarded, then put the shredded beef on and some Muenster cheese and finish toasting. Add some pickles or maybe some pepperchini’s if I’m feeling adventurous. Simple, quick, delicious.

    I just grilled some burgers tonight on the smoker. Local ground beef from a customer of mine, plus a couple extra wagyu patties. Wife made homemade hamburger buns to go with. No pics of the burgers though - we ate them too fast.

    Yes. Smoked chuck roast. It turned out so good I was kinda sad I was shredding it and not cutting it like a brisket haha. Smoked on straight mesquite from 10-3pm. Seasoned with salt, pepper, and garlic.

    I’m a French dip whore but have never made my own at home ironically. Looking forward to tomorrow!

    Also bought a meat slicer tonight. I did a pork loin on the 4th and figured having a meat slicer would help turn that into sandwich meat rather nicely. Also bought some pickle juice to brine some chicken breast in and will slice that up for cold cuts once cooked as well.

    I need help.

    That all sounds delicious! I haven’t made them in a while but thin sliced prime rib with Boar’s Head brand horseradish cheddar on a French roll baguette was my go to! Loves me a good French dip. There’s an Irish pub nearby that has a mushroom bacon Swiss burger on a hoagie roll and a side of au jus that is pretty epic tooIMG_0810.jpg

    Me, too, even though I'm still full from dinner and haven't even had the homemade pistachio ice cream in the freezer yet. Not that pistachio ice cream is really my thing, but homemade ice cream is virtually always delicious. Might have to pull a chuck roast out for tomorrow, though. :monocle:

    As I grilled some chicken breasts tonight, I thought to myself, I really love my tiny Weber Q grill. I bought it a few years ago for like $100 off Craigslist to use as a tailgating grill and now it's the only gas grill I use. It's a real joy to cook with. Simple, heats up quick, easy to clean and maintain, and it's got great aftermarket support. Even with it being so compact, I can fit a surprising amount of food on it.

    Yeah....
    Was on a BBQ Cook Off Team for around ten years....
    We did pretty well as far as placing goes and I learned a lot of tricks for making good BBQ.
    When I stopped competing I didnt eat BBQ for several years.
    When we'd compete in arenas without great ventilation I could barely talk after two or three days of breathing in all the smoke.
    And GOD help me for all the Beer and Whisky I drank during these events!!!!
    It'd take a couple days just to recoup afterwards!!
    I will admit it was a lot of fun unless it was your turn to tend the fires all night...
    You could sneak in a few naps here and there but the last thing you wanted to do was pass out and let the fire burn down with all your Buddies counting on you and hundreds of dollars of meat on the pit.
    But yeah I miss it.....kinda.
