"Mexican" not being an official language isn't what I'm asking about. That's factually correct. That still doesn't explain your assumptions about him.

 

Why is saying that someone is "speaking Mexican" automatically a bad thing meant to be a dig and showing bias, rather than being a colloquial way to specify the dialect of Spanish?

Nobody said it was. It's a dialect. Same for Ebonics, but it's not incorrect to say somebody does or doesn't speak it.

 

I have found that English being the "official" language of the world, has nothing to do with us in America. It dates back to the British empire. If the Romans had been more successful, we'd all be speaking some sort of modernized Latin. But then again, most of English is derived from the Latin.

The most fun I've had with language dialects was when I was on a job site with a Quebecois guy. He was real proud of his Frenchness. Then we had a new guy join us. This guy had just immigrated to Canada from France. Quebecois guy was super happy he finally had someone to speak French with and ran over to introduce himself, jabbering away in French.

New guy listend for a bit and then politely asked with his thick, true continental French accent "Excuze me zir, are you new to ze French language?". Quebec guy got all uppity and said "Non! I am French, from Quebec!!".

French French guy: "oh, zen 'ave you suffered a 'ead injuree?"

Quebeois guy: "Non!! Tabarnack, why you say that??"

French French: "Becuz your French soundz like eet is been spoken by a deaf retard. Is that really what ze Quebecers believe eez French!? What an inzult to such a wonderful romance language!"

Quebcois guy: "Ay! fuck you *insert vaguely french profanity here*

French French: "Ouais, ouais. Au revoir, monsieur. Aaron, how about we work together? I think we do better without ze slow one, no?"

That was the day that I learned true French and Quebecois French are not the same, and as usual Quebec is wrong.

What does it mean to you and why would you assume it means the same thing to me? That's pretty presumptuous for you to assume that I know exactly what it means.
