    I missed Blade Show Texas for the first time in years a couple of weeks ago. (Not a bad trade off though, I missed it because my first grandchild was born that week.)
    Since I couldn’t go, I had a seller I know pick me up a couple of show exclusives.

    I wanted to build legs but didn’t have enough black walnut to accomplish that.
    These are cast aluminum purchased from Bear Hollow. Painted black to look like cast iron.
    I fabricated the extra brackets to allow for adding the 2 diagonal braces.

    Thanks, I spent a tremendous amount of time searching for what I thought would match my table top. It’s apparently very common for people to build tops and buy legs or supports. Most are pretty trendy or dated by the angular or tube steel structure. Almost went with a style that I could have built from massive bridge steel and big bolts and nuts

    The last Mouse arrived last Friday. It was a day late but at least it was delivered and survived the trip.
    This is a GiantMouse Carbon Fiber Nazca with MagnaCut. (Limited run of 350 Pieces)

    It’s interesting that their quality has improved since they started making them in china instead of Italy. The quality of Chinese knives has definitely gotten better over the last decade!

    Ray I do believe the point is a bit too much. I am thinking that point may not be there for to long. The point needs to be more broader and a bit thicker so one can pry open the shell.
    I am no professional but I have shucked my share of bags of oysters. I have done enough to know I do not miss it one bit!

    This is what is used mostly on the gulf coast, and the only ones I have used. With that fine of a point it is only going to break a small piece of the shell.

    I only point this out in the most respectful way, Ray :)

    I agree. These are faily new, only used for 6 or 8 bushels, but have held up well. They also have a slight curve in the blade, it helps when separating the muscle in the curved portion on the shell.

    I don't have first hand experience with the Italian Made knives, but from what I have read, many others have the same observation as you do.
    The Corta (Flipper) is made by Reate and the Nazca is made by Bestech. Both are known for quality knives which shows with these as well.
    I Believe some of their models are still made in Maniago Italy and I have been eyeing up the Atelier which I know was made in Maniago with Elmax Steel. I am curious if it has the same Quality as the Corta and Nazca.

    This sheath has the adjustable and multi position functionality from the Blade-Tech clip.

    I am beyond excited for this oyster knife. My wife has a Toadfish and it works *really* well on the smaller, more delicate west coast oysters but can also handle the bigger east coasters without excessive shell damage after some practice.

    For my knife, I asked Ray to model his based on that blade shape/design. It’s a little non-traditional compared to the broader, duller New England style knives, but it’s a proven blade shape that works for us.

    Thanks again Ray! Looking forward to having it in hand and many decades of shucking ahead.
