Yes, you can put that size tire, and many others, on the stock rim.

Is there a chart that shows what tires will fit what rims or is there a rule of thumb? As fas as how many sizes you can go up or down?
    Thanks

Height wise, you can go as tall as you want. Whatever you can find in an 18" tire. Hoping you understand an 18" rim can only use 18" tires?
OEM wheels are 8" wide. Rule of thumb is around no wider than 4" from there, give or take a bit. So, some shops will not put a 12.50" wide tire on a 8" wide rim. Some won't care.
You also must consider wheel offset on the Tundra. A 12" wide tire on the OEM wheels will most likely rub on the upper control arm, possibly skid plate, etc.

But, with the tire size you mentioned, you shouldn't have any issues. Maybe having to remove the little mud flaps on the front bumper.
