I have 2 Ecobee smart thermostats, one is a v3 and one a v4. Each has a room sensor. No issues with them, just prefer Nest over these. $70 shipped for everything or $60 local pickup, located in Chandler, AZ 85249.

Do the sensors just allow for certain rooms to be heated or cooled more than others?

Yep, that way you’re not tied to your hallway or whatever tstat location is. There’s a “follow me” option that will sense the currently occupied room and go off of that sensor
