I really want to run 34" Nitto Trail Grapplers.

I have a 2018 Tundra with a 2.5" Leveling Kit. I have 20" Toyota rims and am currently running 275x60r20 ridge grapplers. Can I run 275x65r20s with just some minor trimming or molding?

that's the size of tire i run and if you're willing to remove or trim the front flaps and possibly pull your front liners forward a bit you can get away with running those tires AND you'll have no rubbing anywhere.

Pull the front flaps, may need to trim rear flaps a bit where they bulge forward, and may need to massage the edge of your skid plate. Do all that, and you may as well go 285/65-20…
