Been looking to add a back up camera on the trailer, since I don't always have someone there to guide backing up, but I can't stand some of those hideous monitors that come with it, is there aftermarket headunit that can accept bluetooth input? something like Alpine Halo?

Could install the FRAC and run an RCA extension to the trailer hitch.

The camera has a long male RCA connector at the end of it, which is supposed to connect to the FRAC harness, but instead mount it to the rear of your trailer and route the RCA to the tongue. Use a male to female RCA extension to connect to the FRAC and route the female end to the trailer hitch. Connect the RCA jacks together when you tow.

You can definitely accomplish this with the FRAC harness and the FRAC trailer adapter kit. You can either hardwire a camera as described in an earlier response or you can purchase a wireless camera and plug the receiver into the FRAC adapter.
