Tundra 5.7 AC problems

    2007 Toyota Tundra Limited 5.7L
    As the title states, I have a 2007 Tundra at 208k miles and the AC has started going in and out intermittently/randomly. When it works it blows ice cold and works fantastic but seemingly at random it will just stop cooling (the blower motor is still functioning) and the AC light will flash. I tried switching out the relay in the hood and all the fuses appear to be in good shape. Anything else I can try before this gets expensive? Took a look at the charge in the line and it was acting weird with the high-pressure spiking to the point of maxing out the gauge. Kinda thinking the expansion valve has become partially/fully clogged but it's weird how intermittent it is, sometimes It can go well over 30 minutes functioning perfectly, and other times it will go out almost immediately after turning the AC button on and off. Seems that leaving it off for a while will let it go longer but I honestly don't know what Im talking about. Most stuff mechanically I'm mint and can figure it out but AC is alien to me.

    Troubleshooting attempts:
    Switch out relays/check fuses
    Check charge in line
    The Blower motor is still working fine


    Im sure you guys have more experience diagnosing this stuff than I do as I'm just a monkey with a wrench but.
