    Barbecue is a regional thing and everybody will have their favorites and no doubt opinions.
    That being said the level of authenticity for me depends on the history of the place, the recipes, and the vision of the owner. Those things can be hard to determine.

    I mean as long as you guys like it, who cares. If it tickles your pickle in the right way, keep going back.
    The places local to me, I’ve found out by word of mouth. When I first started my career, we did work at this place Mr Ks, I then learned the back story; his dad was the first African American cowboy in our area, and the bbq then followed. But he had a super cool history museum in the restaurant, showing all the stuff from back in the day. Pops had colt 45s for door handles on the old dodge pickup.
    The other place I’ve been going to recently is a long time pit master in town, times aren’t easy for anyone, so I try to spread the word and support as much as possible.
    Boulevard BBQ if anyone is ever in Tucson

    World War z zombies I'd head for the coast. They are to fast to try and beat head on. Take a boat, find an island and fight off whatever is on there and make it yours. Walking dead zombies I'd find a slump block house on a piece of land and live out my days there. Fortify it as much as I can and welcome in anyone bearing the toyomafia badge.

    Man smoked meat rarely disappoints a crowd. Like others said if it's good, and you like it then it doesn't matter
    I'll search out a spot I consider to be authentic just so I know I'm not getting 'commodity' barbecue made for the masses. Usually a crappy side of town in a city close to the epicenter of a barbecue style. So anytime I'm around KC, Memphis, Texas in general, or in the Carolinas, I'm on the lookout for a place that looks older than the buildings around it. If I can see the woodpile and smoke stacks it's a bonus.

    Several years ago we got about 400lb from the old legacy tree. Our goal is to be able to not buy fruit all year long. I usually dehydrate 20 - 30 lbs. We still have several gallons of frozen pear sauce left from last year. Our apples are still a few weeks out and this year we have a little cider press to help keep up. The pigs are getting the scraps and scabby ones…. Mmmm fat pigs!
