so i just bought a mk 2 tundra and put a 3/1 lift kit ready for wheels.
there are 2 sets im looking at:
20x10 rims 18 mm offset running toyo 305/55r20
these are awesome but im worried about trimming
does anybody run these and did you have to trim?

the other set are more sensible 20x9 rims 0 offset running 275/55r20
    they are probably more sensible
but i think they may be too skinny

    any thoughts either way?

You should really consider 17 and 18 inch wheels also. There are several awesome options. You save weight on the tires and wheels as well as rotational mass which can help with MPG and overall engine use, they are easier on your brakes and they fit much better with way less trimming compared to 20s. Additionally they ride much more comfortably than 20s. If the 20s are your only option then you will want to do a search for other forum posts on those specific wheel sizes and offsets.
