    I've tried other 100% real maple syrups before as I'm sure many of you have as well, it's usually from Canada or Vermont. Not sure what makes it all a little different tasting but I will say mine is different and very good. I think it's because I do NOT use a reverse osmosis system, whereas every large production does. That's all I can come up with. using a reverse osmosis would save us a ton of time as far as cooking, pretty much would cut the boiling time by at least half, and we'd burn half the amounting wood. But I'm convinced it changes the flavor, so I'm not sure if be willing to get an RO system.

    So I have to admit, I “super trooper’d” your maple syrup straight with a shot glass. The flavor is very bold and rich. My oldest daughter hates MS and liked your brand. She wants pancakes tomorrow morning.

    Those are some good sized trees. I just had one cut down in my yard and cut down 3 myself. Almost done cutting them up. Need to split it and trailer it over to the sugar house. Should be about 3 or 4 cords worth for next season.

    If I had more property I'd do honey. It's a decent initial investment but not bad year to year. Some day I'll give it a try.

    We can get local honey from farmer's markets and such. But it's way cooler to get it from someone you know.

    Local is really the way to go. Especially if you have seasonal allergies. Something about the pollen in the area and the bees converting it to honey. But I agree about buying fresh and familiar over local and unknown.

    I've heard that too. As I understand it, when you get allergy shots they are actually injecting small doses of what you're allergic to so you can build up immunity without a reaction. When you consume local honey it's made from the same pollen that you breathe, so similar effect.
