I think I have decided to keep the factory wheel which I believe is 18x8, if so what is the largest tire I could get with 3/1 level without rub or major cutting (minor may be acceptable)

295/70/18's are pretty common with the stock wheels. Wheel spacers may be desired to assist with the overall looks as well as keeping the tires off the skid/sway bar/frame when turning to full lock.
Next size down would be 285/65/18 or 275/70/18 but they're hardly bigger than stock.

275/70/18 is very popular among those who do not want to lift their truck or not by much. I think that size (1 inch taller than stock) looks pretty good with 2 inch leveling kit. I think if you go with 3/1, then that might look bit small.

I have 275/70/18 on my truck with a 3/1.5 leveling kit. I am very pleased with the way it looks. I think it's very proportional. Pics are on my build page.

I have that size, 275/70/18's with a ton of room left with my OME 3" lift. Definitely can go 35"with the Relentless cab mount mod done.

For sure, did @jberry813 CMC for 35's on his King 3/1" lift and I have 2.5/1.5 currently with 295/70/18 and no CMC needed. Plan to step up to a 35x12.50 or metric 35x13 for my next set, i'm sure I'll need the CMC at that point though.

    Oh one or two.
I don't think it will be too hard I think these trucks with a 3" and 37's should be perfect.

If I had the money to regear I would definitely stuff 37s. 34.5" are just a little on the small side for the 5.7L
