    My first experience w/it was at Buchon (a Thomas Keller place)... We were there for brunch, and I was having chicken and waffles. Like most of Keller's offerings, nothing is basic. The waffle was chive and bacon infused, and the chicken was fried in duck fat. I almost passed on ordering it because it just didn't sound right for breakfast. Mind you, I'll eat duck especially in curries and such, but that correlation of its flavor from past experiences just wasn't clicking in my brain. My wife encouraged me to give it a try (she actually shamed me into trying it), but OMG it was incredible and nothing like I was expecting. Just super clean and the chicken was beyond crispy but not over cooked or oily in flavor; it's almost like the duck fat enhanced the chicken's natural fat flavor and just made it better.

    My next experience w/it was at Daniel Bouloud's place in DC (I believe it's since closed)... Steak and frites (which were also done in duck fat).

    As mentioned doing fries in beef fat will also provide a very good 'fry' and here let me find a little video on twice frying...

    One of my favorite aspects of summer is the abundance of fresh cherries.

    I like tossing them in the fridge to cool down and enjoy them as a refreshing treat!

    If I recall correctly, the authentic Belgian method is to blanch them then to fry them at two different temperatures.

    We've had this discussion before (in this thread actually). However, I'm almost certain I didn't multi-quote, so I'm sure you did not pay attention.

    No, I don't do it often. However, when we travel, we'll splurge on some nice meals and even end up doing something waaaaaaay out of our wheel house for an experience.

    I've taken my wife to the French Laundry and did so on a Gold Card experience...

    $1500 for the 2 of us (everything included) which was about a 3.5 hour dining experience, a 14 course chef's tasting menu and included wine pairings, tax, etc... Nothing else expected, nothing else to 'add' to our dinner, no guessing, no upcharging or upselling, and nothing but the best :thumbsup:

    Everyone there must have known we didn't 'belong'. Yes, I was super unconfortable wearing a jacket to dinner, but I did it for my wife and once we were there, we didn't feel out of place. I thought it would be super awkward since we really don't 'fit' into that scene, but OMG we were treated exceptionally well and never felt or were treated like we were 'out of our class'.

    I ate things there that I would never have tried elsewhere.

    Definitely not an every day or even an every year experience for us, but I'd do it again for my wife.

    I guess I don't see much difference in doing somethign like this vs. taking a family of 4 to Disneyland these days :notsure:

    We're just not the type that enjoys that kinda stuff. Neither the wife or I would enjoy that type of place, even if we were loaded and the money was no issue.

    Typically no, the pickers get 99% of the cherries off the trees.

    If it's a shit cherry season due to the market, rain, hail, disease, bird damage etc.. they will occasionally let them hang and not pick; collect crop insurance.
    That can be messy and the mice population explodes for a few months.

    Nope. I just have that one maple tree in the picture and a couple dozen pine/fir trees behind the house.

    My FIL had 100 acres of cherries when we got married, sold the orchard and retired about 10 years ago

    Do you still have the bag? Curious where they're from.

    I almost took over the cherry orchard when my FIL retired. Very glad I didn't. 100 acres is small time now and can't absorb today's costs/regulations.

    No, it got thrown out when my wife washed them off and put them in a bowl. It's one of those loss leader things they do this time of year, week before was $0.99 grapes, and $0.97 strawberries.
