    To each his own as they say.
    One of my favorite cuts is the Fillet Mignon which is pretty lean.
    But give me a T-Bone which has the best of both worlds.

    That Wagyu steak had a lot of marbling but some of it was simply too much, left for some chewy pieces.

    Make them however you do. Then imagine how it'll get puffy in the middle, then work that area in the middle down to half thickness.

    Or,
    Find a plastic jar top from something that is the size of a burger you like. Then cut a piece of plastic wrap. Put the wrap over the lid, then place ground beef in it to shape.

    Perfect hamburgers

    A thumb indentation in the middle isn't enough. You need about 30% of the middle flattened.

    BBQed/Smoked a Wagyu Brisket yesterday.
    Haven't even tried it yet....
    By the Time it was done so was I.
    The Wife's Boss raises them so we have a freezer full of Wagyu.

    Ooni freakin rocks. We've had ours for a little over a year now :fistbump:

    It's so awesome to be able to fire a pizza every 90 seconds or so. Allows us to make one to each person's liking or to pop one in, everyone shares a piece, drink, chat, fire another, repeat!!!!

    Try turning the heat down on the grill a little. I find that the meat hitting the grill should sound like butter in a pan that’s heating up rather than sizzling like bacon on full heat. Else it melts off all the fat and leaves the proteins to shrink up. I started grilling my burgers on the pellet smoker around 345 degrees instead of 500f on the grill.

    I also shape the patties like small pizzas with some extra crust on outer edges. The lower heat and slightly concave patties usually yield a tender, flavorful burger with a consistent thickness throughout.

    Been thinking about picking up a Pizza oven....
    Already have a couple of the clay pizza plates you cook pizza on.
    Makes the crust nice and crisp.

    Ooni's are definitely awesome and highly portable, but it takes some time for them to cool down...

    I've seen some other brands on Best Buy's deal of the day pop up lately too (Bella maybe), but I'm not sure about the quality and performance of theirs...

    It's really nice in the summer cuz you can do pizzas w/o having to heat up the kitchen at all; plus 700+ degrees w/flames rolling over the top of the pizza definitely beats out a 500 degree oven.

    Although a little less 'authentic', I do recommend the propane or dual fuel models over the wood chip models.

    Yeah we love grilled pizza. Wife just got me the ooni setup and it’s awesome. I never sit down on pizza night but it’s a ton of fun. So much better then delivery.

    I got gas. I wouldn’t recommend pellets either. You need those real high temps for great pizza.

    Love my Ooni Fyra (I think?). It's the wood pellet model. Gets PLENTY hot, 900* no problem. The only time I had an issue with it is when the pellets I was using were a little damp. I would love to bring it on a tailgate, but it takes way too long to cool down.

    My favorite is doing breakfast pizzas. Scrambled eggs, bacon, pepper jack cheese, drizzled with some hot sauce. :hungry:

    Didn't grill yet, but had the wife pick up some NY strips and sirloins for our dinners this week. To keep things interesting I'm gonna season/marinade each nights dinner differently. ATM I got some sirloins sitting in some Bear & Burton's Worcester sauce and Meat Church Blanco.
