    Those are west coast fish called "Barred Surfperch" aka "California Perch". Pretty tasty.

    Multi-day road trip? While CA sucks in a lot of ways, ocean fishing is awesome. Surf, pier and even boat fishing are viable options. And if you're feeling extra adventurous, go north and try the Sacramento Delta and Sierras for some freshwater action. Heck if you time it right, you can get salmon or steelheads.

    Thats an awful long trip to go fishing.
    If I were in the area I would certainly check it out!!
    We go to Jamaica frequently and hire a boat to go offshore.
    The Fishing is fantastic since the locals can only go so far in their wooden 16 foot boats.
    The Charter boats are new and reliable and go out 100 miles plus on a regular basis.
    You bring your fish back to whatever place you're staying at and the cooks will do you right.
    While you can have your fish delivered back to the US we always treat the other guests to a fish dinner.
    When you do that you wont pay for a single drink at the bar for the rest of your stay!!!

    LOL..still a long way to try some fish.
    Although a Buddy and I flew from Houston to Southern California for the US Festival when we were around 17.
    Unfortunately I dont remember much of the trip.
    We started out by doing one hits in the plane bathroom on the way there.
    After that it was sleeping on the ground for three days waiting for the next round of Bands.
    A great time!!......As far as I can remember.

    I'll admit that I'm not familiar with the technique but I'm ready to be clued in. Because what ever you're doing, that thing looks delish with a perfectly even MR center.

    Smoke at 225* until 100* internal then sear at 700* for 1 min a side until 120-125 internal. Let rest for 5 mins before slicing.

    It's really sure proof!!
    As in you'll never screw up another steak!!
    Put your steaks on a grill with a pan under it and place it in the oven damn near as low it will go.
    You should put a thermometer probe in the steak just to be sure.
    When it gets close to your desired internal temp take it out of the oven and into a scorching hot pan with whatever you want to use as a searing oil.
    I'd suggest you use Clarified butter which is easy to make.
    So..it basically warms the internals of the steak to just below what you want it to finish at.

    Nope...not for a steak.
    For reverse sear you bring up the internal temp up to just under the desired finish temp.
    Then you toss it on a Hot Pan to sear the outside and bring the outside up to the sear you want.

    Just to be clear.
    I was on a cook off team for around 6 years.
    I've won several trophies for my skills.
    Am I the best cook in the world?
    Hell no!!!
    But I do know the basics and what it takes to make some top of the line Grub.

    Problem with that is the sear will over cook the internal temp you want.
