    Those are pretty good and convenient, I need to pick up one next Costco run. I grabbed a couple of corned beef packs at the grocery store today, they were clearing them out after St. Patrick's. Going to maybe try one on the grill and one in the smoker.

    Smoked then fried wings, tossed in orange marmalade, sriracha sauce.

    Smoking them at 225* but very briefly, 30-40 minutes just to build flavor. They'll come out, get a little corn starch, cool off a bit in the fridge and make sure the turkey fryer is up to 375*. Then they go in for 8-10 minutes, out and then on a plate with paper towels to absorb some oil, then tossed.

    Wife wanted fries in the oil as well, so she'll manage the wings when they come out while I handle the fries.

    I tried getting a belly twice but always thought there was way too much fat. Found a place that make good extra thick bacon but it simply is not worth shipping and all that! So here in Texas we buy Blue Label! relatively thick and tastes dam good!!!

    It's quite the combo. I also added a touch of brown sugar and some wash your sister sauce for good measure.

    Unfortunately the wife doesn't like things as spicy as I do, so only 2 tablespoons of sriracha to the jar of marmalade

    Smoked a pork butt for 18hrs for my son’s bday. Pulled it off at 3am and put a blanket on it to nap in a cooler until the party. We usually do tacos and they are always a hit! IMG_0283.jpg IMG_0307.jpgOne of the kids dad always jokes he just comes for the food, I don’t blame him

    Yesterday was a deep clean of the Weber kettle. It'd been so long, it was filthy! Replaced the one touch cleaning system. Due to the Easy Off oven cleaner I used, I thought it may be best to run it hot for several hours before steaks tomorrow. So I grabbed my trusty vortex, filled it up and got that going. And to make my yard smell nice, put a large piece of post oak on the grate above it. Been running 600* for a few hours.

    Holy Bison!!!! :) Have not had Bison anything. Can you describe how they taste compared to a regular beef ribeye?
