    Not entirely grilled, but it got a charcoal fire sear to finish it off. I got a sous vide and put it to the test by cooking a chuck roast for 24 hours to get it nice and tender. After searing, it ate like a really good ribeye!

    I wish I could grill and smoke like you guys. I'm propane grilling some sirloins tonight and that is the extent of my abilities. :rain: I'll probably burn the damned things haha.

    The pics are making me hungry though:drool:

    Hell, I made that on the stove and oven. Was too lazy to fire up the smoker tonight. Cook with whatever you have, it can still be delicious.

    Yeah, you can make a pretty great steak just by searing the outside on the stovetop, and getting the internal temp right in the oven.

    For the lady for Valentines day. We don't normally do 'Hawks but it's been a tradition for a few years now. Single steak, on the cutting board, we take slices as we enjoy each others company.

    But my passion, personally is smoking. That I do regularly. Wife refuses store bought bacon for example these days, so I buy a fully belly at a time, cure it, cold smoke it, par-freeze it, and then slice it up, and vac seal them.

    I love this for you two!

    We started doing something similar out of simplicity due to the baby, and this quickly became one of our favorite things.. I may have to make a special situation for special occasions like you did... I like that a lot!

    Gotta make her feel good too, right? And if lines up with a hobby that I already enjoy, that's a win-win IMO! Sure helps keep her off my back spending on the truck lol. That or she'll start asking about about modding her 4Runner, which I'm a-ok with, since I talked her into it and out of her Heep!

    Grilled some chicken thighs last night, marinated in the Zest and Juice from my "Citrus Salad" tree right behind the BBQ Island.

    The tree has 5 different kinds of citrus grafted onto it; Meyer Lemons, Limes, Tangelos, Mandrin Oranges, and Navel Oranges.

    I zest/juice a few lemons and a couple oranges, whatever seasonings strike my fancy that day, some Avocado oil, and a shot or two of Ketel One Orange/Peach Vodka, and let it soak in there for awhile.

    Roasted Red and Yukon Gold taters and some Asparagus. Whip up a Lemon cream sauce to drizzle on any or all of it.

    Turned out sooo good.

    What don't you like? When brined and pulled off the grill at the right temp, I find them fantastic.

    Growing up the chops I was given were thin and usually cooked to death.
    I grill pork chops every once in a while, but they come from the butcher shop and are at least as thick as yours

    I did have to ask the butcher at the grocery store to cut me some. The other butcher pointed to those that were out until I told him I want them 1.25-1.5" thick. Then he understood lol.
