I can't buy those any more. If you eat too many of them in one sitting they will stop you up like a cork. At least that's what a close friend told me.

Fiber helping with that may be a myth. New research is showing high fiber can exacerbate the problem.

Wife made these last night, and I've gotta say... Yuhm!!!!!

    I give you... Bourbon Balls!!!!

    BB3.jpg

These are uncooked, frozen treats that are super rich and flavorful (bourbon flavor of course) and go great with... well, bourbon of course!!!

    *** Notes ***

Since the alcohol is NOT cooked out of these, they are stout and maintain the flavor/intensity of the specific alcohol used. So, I'd suggest using a decent quality bourbon when making these. We used Buffalo Trace, but anything you enjoy drinking would be great in this recipe.

Also, since all of the characteristics of the original alcohol are retained, you can easily substitute a good Rye, Scotch, or Irish Whiskey in place of the bourbon for some a unique twist on the recipe and final product.

    *********************************************************************************************************************

I think they are fit for the Mafia Cookbook if anyone would like to throw the recipe in there for everyone's use...

    BOURBON BALLS

    2 cups pecans
    2 sticks butter
    1 lb powdered sugar
    3/4 cup bourbon of choice
    1 lb melting chocolate

    1. Turn your nuts into dust by running them through the food processor.
    2. Soak the nuts in 1/2 cup bourbon. Preferably overnight, but a few hours works too.
    3. Cream the butter and powdered sugar. Add the bourbon to the butter/sugar mixture, then add the soaked nuts.
    4. Let it sit in the freezer for about an hour.
    5. This part will make you mad, but trust the process. Take about a tablespoon of the mixture and roll it into a ball and place on a cookie sheet.
    6. Once all the balls are rolled place them in the freezer, at least an hour, several hours is better.
    7. Melt your chocolate.
    8. Dip your balls in chocolate. Once all the balls are dipped back in the freezer to harden.
    9. Enjoy!

I could've said pulverize your nuts in a food processor, but the word pulverize seems a bit subjective...

So, I went with a more descriptive and visually understandable instruction :D
