Anyone know if using SAE flaring tools will work on the metric brake and fuel lines? I found one cheap metric set on Amazon but I don’t trust it.

You need a flaring tool that can at least do double flares (inverted flares); not single or bubble flare, otherwise they will leak. Your brake tube should be 3/16" so a 3/16" flaring tool that does double flares should be fine. Metric fittings though.
