    I have them so hooked lol

    Had to soak for at least 8 hours. Going for 12 or more.

    I've done jerky many times on the Traeger, but cant get juicy jerky out of it.

    LOL ok. I am sure its no secret on the recipe but I act like it is and folks here love the stuff.

    For this batch I used arm roast. Normally I like to use inside round, and sometimes when I really want to spend some money, tenderloin.

    Now when I buy beef it is at least usda choice, and I prefer Angus or bison.

    Trim off all excess fat, slice thin, I prefer around 3/16 of an inch or there abouts.

    Prepare the marinade.

    1 bottle soy sauce, 10oz
    1 bottle Worcestershire, 10oz
    2 tablespoons black pepper
    Tender Quick, about 2 level tablespoons
    tablespoon liquid smoke, hickory

    That's it. Mix all ingredients in a bowl, place sliced meat inside a gallon zip lock freezer bag or sealed container and place in refrigerator for at least 8 hours, 12 or more is even better. every now and then flip the bag over and squeeze the bag to mix the meat and marinade during the soak.

    Prepare your smoker or dehydrator, today I will be using a dehydrator. Pour meat out of bag and into a colander and allow to drain. Line sheet pans with paper towels and place the drained meat slices into the paper towels and remove the excess marinade. This helps keep your dehydrator cleaner and the jerky id done sooner since excess liquid is removed.
    Don't worry the black pepper will still adhere to the meat and there will be tons of flavor.

    Place meat on dehydrator trays and walk away. Every few hours rotate the trays and flip the meat over at least once during the drying process.
    This normally takes me between 5-6 hours. Your times may vary depending on how dry you like your jerky.
    Once jerky is done, place on racks to cool then into bags to give away or a glass jar with a lid.

    That's all I do, it sounds more complicated than it is

    Yeah. Motor is on the top, the fan extends into the hole in the center for even circulation. Works well.

    I've always wanted to get into making my own jerky. I never have found a store bought jerky I was 100% happy with. Buddy of mine makes deer jerky that's the best I have had. I like dry jerky sliced about 3/32.
