True enough. I hadn't thought about getting them started. But if you can get your bus running, then there's no excuse. My grandfather used to get diesel tractors running on the farm when it was really cold, though. There are oil warmers and other things that can help. (The livestock still need to be fed and watered regardless of how cold it is.)

 

This is true, but guberment's are known for keeping useless employees that do the minimum. Maybe they didn't plug in warmers, or didn't use antigel in the fuel.

 

Also, I think the diesel sold here has to have a pour point of minus forty-something. Not quite as low as jet (-60ish) but it's down there.

 

Maybe you're right and the drivers, or somebody higher up, is a wuss and just didn't want to work that day.

I've never had it. Not something I'd go pay money for because it's risky. If I knew somebody that made it and it was generally reviewed as good by "experts" then I wouldn't refuse to try it. That's all I'm saying.

Man, I miss San Diego... we had a great fish taco place that made an incredible ceviche!!!!

But, since you don't drink beer we'll have to pick out a great drink to pair w/it (gin/vodka tonic, wine, other mixed cocktail). Sorry, but you can't drink monsters w/your ceviche!!!!

Also, it's not just beer that I avoid. I don't drink any alcohol. Too may bad experiences with other people drinking, and I'm terrified I'd fall in the bottle and never come out.

 

If you don't like avocado, you could always run a light crema; you just want a light balanced fat w/a splash of acid (lime juice) on there; and don't want anything that overpowers the flavors of the delicate mahi

Not a problem; one mocktail coming up; just make a light and refreshing lime and tonic; perfect balance w/your ceviche!!!!!!

I like the lime juice on regular tacos, so I'd be down for it here. Not sure what "light crema" is. I'm a culinary retard. Is that going to be something like sour cream? Or, could I use guacamole instead of avocado? It's really just the texture that gets me.

 

Crema is kinda like sour cream, but you've got to be super light w/it on fish; so, I'd probably mix it up w/a little EVOO and lime juice... Yes guacamole would be fine, but you've got to be careful w/that cuz most have onions and hot peppers in it; so, again, you don't want to overpower the fish. Now if you make your own, and just kinda smash up the avocado, add a little lime, and a small dab or 2 of crema... you'd be good to go, then just give the tortilla a light smear of it, or drizzled over the top!!!!!

Is it warm? I struggle with cold shrimp, but again, I'd try it. How is it consumed? In tortillas? Just spoon it in the maw?

It's not heated.... It's bathed in an acid (usually lime/lemon juice) and chilled in the fridge until the acid "cooks" the fish/shrimp. Usually it's eaten w/light crispy tortilla chips or pita chips of some sorts. For a first time try, I'd suggested just using small pink shrimp (like what you'd use for popcorn shrimp), so you'll be sure to know when it's "cooked" through if you're not into raw fish, etc.. The pink shrimp will turn translucent when they have "cooked", then take it out of the fridge and enjoy!!!!
